A much healthier take on the classic egg salad. The coconut bacon makes this avocado BLT egg salad vegetarian and, I think, more delicious than the pork original.

Avocado BLT Egg Salad Ingredients

·       1 medium-sized ripe avocado

·       6 organic hard-boiled eggs

·       3/4 cup grape tomatoes, cut in halves

·       4 strips of crispy coconut bacon crumbled into pieces

·       1/2 cup scallions, chopped

·       2 teaspoons ground garlic

·       1/2 teaspoon Sea Salt or more to taste

Directions

  1. Make your hard-boiled eggs. Once done, peel, place in refrigerator, and let cool.
  2. While they are cooking, make bacon using your desired method and cook until crispy.
  3. In a medium bowl, combine the eggs, avocado, garlic, and salt; smash with a fork until combined.
  4. Add in coconut bacon pieces, tomatoes, and scallions. Mix well.
  5. Taste and add additional salt and ground garlic as desired.
  6. Serve over fresh greens like arugula or spinach or put in lettuce wraps. Yummy!
