A much healthier take on the classic egg salad. The coconut bacon makes this avocado BLT egg salad vegetarian and, I think, more delicious than the pork original.
Avocado BLT Egg Salad Ingredients
· 1 medium-sized ripe avocado
· 6 organic hard-boiled eggs
· 3/4 cup grape tomatoes, cut in halves
· 4 strips of crispy coconut bacon crumbled into pieces
· 1/2 cup scallions, chopped
· 2 teaspoons ground garlic
· 1/2 teaspoon Sea Salt or more to taste
Directions
- Make your hard-boiled eggs. Once done, peel, place in refrigerator, and let cool.
- While they are cooking, make bacon using your desired method and cook until crispy.
- In a medium bowl, combine the eggs, avocado, garlic, and salt; smash with a fork until combined.
- Add in coconut bacon pieces, tomatoes, and scallions. Mix well.
- Taste and add additional salt and ground garlic as desired.
- Serve over fresh greens like arugula or spinach or put in lettuce wraps. Yummy!
