Here’s a high protein salad that is bursting with flavor. Try the simple homemade salad dressing – it’s much healthier than store-bought dressings. This creamy spinach salad zings with the added avocado and lime juice in the dressing.

Creamy Spinach Salad Ingredients

  • 6 cups organic baby spinach
  • 4 hard boiled eggs, chopped
  • 6 pieces coconut bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 very ripe avocado
  • 1 teaspoon olive oil
  • 1 tablespoon of Bragg’s Amino Acids
  • Juice from one lime
  • fresh ground pepper

Directions

Combine the spinach, eggs, coconut bacon and tomatoes in a large bowl.
In a small bowl whisk the avocado, olive oil, lime juice, Bragg’s Amino Acids and pepper.

Pour the dressing over the salad, mix and serve.
