This tropical chicken salad is the perfect pre or post workout meal. It has plenty of protein and fiber, vitamins, minerals and a lovely sweet and sour taste. Try using fresh pineapple if you can as its tastier. You can use purple or green cabbage. I do love purple for its bright color and tend to grab it before the green cabbage when in the supermarket.

Tropical Chicken Salad Ingredients
- 1/2 head cabbage, finely chopped
- 1 red bell pepper, finely chopped
- 1 mango, chopped
- 1/2 cup pineapple, chopped
- 1 bunch fresh cilantro, finely chopped
- 1/3 cup green onions, finely chopped
- 4 skinless chicken breast, oven-baked and chopped
- 2 Tablespoons olive oil
- Juice of 1 lemon
- Fresh ground black pepper
- 1/8 teaspoon of chile powder
Directions
Mix the fruit and vegetable ingredients in a large bowl. Combine the olive oil, lemon juice, black pepper, chile powder in a small jar and shake. Add the dressing to the salad and toss.
