This tropical chicken salad is the perfect pre- or post-workout meal. It has plenty of protein and fiber, vitamins, minerals, and a lovely sweet and sour taste. Try using fresh pineapple if you can, as it’s tastier. You can use red or green cabbage. I love red for its bright color and tend to grab it before the green cabbage in the supermarket.

Tropical Chicken Salad Ingredients
- 1/2 head red or green cabbage, finely chopped
- 1 red bell pepper, finely chopped
- 1 mango, chopped
- 1/2 cup pineapple, chopped
- 1 bunch fresh cilantro, finely chopped
- 1/3 cup green onions, finely chopped
- 4 skinless chicken breasts, oven-baked and chopped
- 2 Tablespoons olive oil
- Juice of 1 lemon
- Fresh ground black pepper
- 1/8 teaspoon chili powder
Directions
Mix the fruit and vegetable ingredients in a large bowl. Combine the olive oil, lemon juice, black pepper, and chili powder in a small jar and shake. Add the dressing to the salad and toss.
